Cette source de richesse traditionnelle pour les communaut\u00e9s de p\u00eacheurs de la c\u00f4te atlantique espagnole et fran\u00e7aise permet le d\u00e9veloppement d&#8217;une importante industrie de salaison.<\/p>\n<p>Sa capture est l&#8217;objet de contr\u00f4les s\u00e9v\u00e8res par les autorit\u00e9s. Les populations de cette esp\u00e8ce ne pr\u00e9sentant aucun probl\u00e8me en tant la p\u00eache dans le Golfe de Gascogne\u00a0 est consider\u00e9e comme durable par organisations de\u00a0 d\u00e9fense de l&#8217;environnement, et permet l&#8217;approvisionnement r\u00e9gulier de l&#8217;industrie en question.
