Paté made with sardines from the coastal Northwest Iberian Peninsula’s inshore fishery (northern Portugal and Galicia), captured with traditional methods without the use of trawls, thus preventing discarding for non-commercial catch size or protected species.
The manufacturing process is made by hand, following the traditional recipe, using sardine fillets without bones and skin, parsley, first cold pressed organic olive oil, onions, garlic and pepper from certified organic farming.
The sardine fishing is carried out under the regulations of the European Union and the states of Portugal and Spain, which includes fishing ban periods and catch limits for each crew member, per day of fishing and per boat. Fishing in European waters avoids long transportation of fish through the world, improving the balance of CO2 and lowering energy consumption.
